Given life through a blend of Corvina and Merlot this fruit forward and striking wine is a perfect choice for any lover of bold reds. Taking the name Passion as it is a wine that should provoke a powerful feeling, an irresistible desire for something. Passion can range from interest or admiration for an idea, proposal or cause; the enthusiastic enjoyment of an interest or activity; a strong attraction, excitement or emotion towards a person. This wine aims to encapsulates the intensity and depth of this feeling.

Half of the grapes for this wine are picked at full ripeness, with the second half picked around a month later. At this point, having continued ripening and drying out on the vine, the sugars have concentrated, and the acidity has reduced. All of which means this wine has concentrated, rich aromas of dried fruit, liqueur cherries, and warming spice.

This wine displays a lovely palate, combining a soft mouthfeel and a lovely dryness. This wine expresses the makers love and dedication to wine. Additionally, it makes for a more wallet-friendly mid-week wine for fans of Amarone.

Corvina

Corvina

Widely planted in the Vento region of Italy's north-eastern corner, Corvina is the most important grape variety of Valpolicella. On its own, it produces wines that are low to medium in tannins with high acidity and bright sour cherry flavours, however it is most commonly blended with other native Italian varieties.

Corvina is known to ripen very late, which can be an issue for growers, but thick skins means that it lends itself well to air-drying - the apassimento process. Grapes are picked and dried indoors to concentrate their sugars, acids, tannins and flavours. The result is a full-bodied wine with high alcohol, high tannins and pronounced fruit flavours (both fresh and dried). This is the method employed in the production of Amarone and Recioto della Valpolicella wines, and to a lesser extent the region's Ripasso wines.
