Chanin Wine Co. is dedicated to crafting wines from Santa Barbara County that reflect the individual vineyard in which they are grown. They focus on Pinot Noir and Chardonnay, two grapes that can reveal the subtle differences in geography, geology and climate. The grapes are grown in Santa Barbara County, where cool coastal winds, diverse marine-based soils and a long growing season provide an exciting and unique environment for Burgundian varieties. This Pinot Noir is grown specifically on a very gentle, even slope with northern exposure, this vineyard can make extraordinary wine.
The grapes are handpicked. Fermented with some whole cluster bunches, the wine has twice-daily punch-downs until dry and the desired colour has been extracted. The wine is aged sixteen months in French oak barrels (fifteen percent new), which helps to soften the high acidity of the Pinot Noir and impart a gentle oak character. Then the wine is racked and bottled unfiltered.
The wine has a generous profile of dried red cherry fruit, orange peel, cinnamon and pine. Delicate and sensual, this American Pinot Noir strikes a wonderful balance between intense fruit concentration and mouthwatering acidity.
