What is organic wine?

Organic wine is wine made from grapes grown in accordance with the principles of organic farming. This excludes the use of artificial chemical fertilizers, pesticides, fungicides and herbicides. 

Previously, “Made with Organically Grown Grapes” was legally the only claim possible, but regulations introduced in 2012 now allow the whole winemaking process, from harvest to bottle, to be certified by law.

The definition does still vary from country to country though. In the US, no additional sulfites may be added to any organic product, including wine. In the EU, added sulfites are allowed, though there are limits on how much. Most other wine-producing countries do not have their own standards for organic wine and observe the standards of the nation importing the wine.

The szamorodni is made only in the last period of the harvest of the outstanding vintages, when the assorted berries are no longer taken out of the bunch, but are picked, crushed, and pressed in hand presses at the end of harvest time, late November. The very high concentration of must ferments in local barrels. After ageing and bottling they wait for a year in bottle before the audience meets them. 

This wine is truly unique. It is the masterpiece of the viticulturist, from his own planted furmint grapes with the greatest possible richness in body and aromatics in the category. Acidity and sugar balance each other perfectly, elegant notes of dried fruits and honey, round, creamy texture makes this wine unforgettable.

Endre Demeter has established himself as one of the leading lights of Tokaj. Demeter owns vineyards in some of the finest locations in and around the village of Mad, the most sought-after place in the Tokaj wine region.

They exclusively work with three certified organic vineyards: Úrágya, Király, and Kakas of Mád. Of the eight hectares three are fully traditional hand labour bush-vines.

Focusing on the indigenous Furmint grape variety, the soils and microclimates across his parcels give each wine its own distinctive character, offering wine drinkers top quality across a range of styles as diverse as Burgundy, despite coming from the same variety.
