Fournillon Chablis

Typical crisp delicious Chablis. 

This is a 23-hectare family-run Domaine situated in the small village of Bernouil, close to Chablis. The wines are crisp, mineral and typical of the Chablis region. The well-renowned Kimmeridgean soils of Chablis give this wine it’s complex minerality accompanied by flavours of fresh apple, citrus zest and white flowers. 

From a small parcel of vines which are almost 2 centuries old in the village of Fleys, the majority of the Chardonnay grapes are harvested mechanically. The grapes are then transported to the estate there the juice is extracted by pneumatic press. Alcoholic fermentation is carried out in stainless steel tank under controlled temperatures. Ageing is also carried out in tank for a period of 12 months.

Chablis is a region within Burgundy, the cool climate here produces white wines with more acidity and slightly less fruit flavours than warmer climate Chardonnay. The wines here are fermented in stainless steel and hardly ever aged in oak, this creates wines with more minerality and fresh aromas.

The world's most planted white grape variety, Chardonnay is prized for its ability to produce outstanding-quality wines in cool, moderate and warm climates. It is most often used as a single variety in still wines but is equally successful when used in sparkling.

The flavours of Chardonnay are many and varied; they're very much affected by where the grapes are grown, the winemaking process and maturation. 

In cool-climates, such as northern France and England, you would expect flavours of orchard fruits like apples and pears, citrus and wet stones. However, in warm-climates (California, Australia) you'd get peachy flavours, tropical fruits, and sometimes even banana. 

It is common to taste other flavours in Chardonnay, for instance fermenting or ageing in oak gives the wine flavours of vanilla, smoke and toast; the process of malolactic conversion can add creamy, buttery flavours; lees ageing adds body as well as biscuit notes.
