Amazing entry level Chenin Blanc from a top producer.

Dry and fruity white wine with a clear and brilliant colour. Floral nose that gradually reveals a delicate bouquet of citrus. The palate is balanced between a beautiful freshness and a fleshy fruitiness. To be enjoyed now as an accompaniment to grilled fish, shellfish, shrimp and avocado salad, goat's cheese or simply as an aperitif.

The harvest is manual, in successive sorting, for a better selection of the grapes. Crates are used to preserve the whole bunches until they arrive at the cellar for pressing. The qualities and particularities of each terroir are thus respected.

In the cellar, the objective is to reveal the expressions of the terroir through a vinification common to all the wines. After a slow pressing in a pneumatic press, alcoholic fermentation is carried out by indigenous yeasts in demi-muids (620 L barrels). It can last up to six months. Malolactic fermentation is not sought. Ageing is carried out on total lees in the demi-muids, it generally lasts 6 to 8 months.  Its all about finding Balance.

Located on one side the Loire and on the other the tufa hillside, welcome to Montlouis-sur-Loire, in the heart of Touraine. Cradle of the Domaine François Chidaine which now covers 45 hectares. Chenin Blanc reigns supreme on the 22 hectares of Montlouis and the 10 hectares of Vouvray. The vines, which thrive in more than fifty plots, have been managed organically since 1992 (certified by Ecocert) and biodynamically since 1999 (certified by Biodyvin). They are sometimes rooted on flint clay soils, sometimes on clay-limestone soils which give the grapes a palette of nuances.
