Founded in 1889 and carved into the side of a dormant volcano crater, Mayacamas stands as a beacon of Napa history, renowned not only for its location atop the majestic Mount Veeder but also as one of America's most iconic wineries. Over its illustrious one hundred and twenty-five years, this mountain-top estate has remained unwavering in its commitment to traditional winemaking, producing some of California's most celebrated and enduring wines. As its name, derived from the mountain range dividing Napa and Sonoma valleys, suggests, Mayacamas has always been intrinsically linked to its terroir.

Famed for its elegant, age worthy Cabernet and Chardonnay, the winery has continuously championed wine purity, resisting fleeting trends in favour of time-honoured techniques passed down through generations. The grapes are meticulously handpicked. Most are pressed whole, while a select few are crushed. This helps to maintain fruit quality while getting a wide array of flavours from the grapes.

Making use of large oak vessels during fermentation in a cool cellar setting preserves the wine's intrinsic character while adding nuance. The wines are aged with Care. spending a year maturing in varied neutral oak vessels, letting its flavours meld without an overpowering each other. Additionally, the winery has chosen to skip malolactic fermentation to keep the zesty essence front and centre.

Aromatic notes of fragrant jasmine and lemongrass, underpinned by notes of lemon, white peach, and pear shine through this wine. Complex layers, introducing bergamot and cardamom nuances off set by its medium bodied palate. A gentle oaky touch enhances without overpowering, adding a beautiful complexity to the wine. The Grape - Chardonnay

The world's most planted white grape variety, Chardonnay is prized for its ability to produce outstanding-quality wines in cool, moderate and warm climates. It is most often used as a single variety in still wines but is equally successful when used in sparkling.

The flavours of Chardonnay are many and varied; they're very much affected by where the grapes are grown, the winemaking process and maturation. 

In cool-climates, such as northern France and England, you would expect flavours of orchard fruits like apples and pears, citrus and wet stones. However, in warm-climates (California, Australia) you'd get peachy flavours, tropical fruits, and sometimes even banana. 

It is common to taste other flavours in Chardonnay, for instance fermenting or ageing in oak gives the wine flavours of vanilla, smoke and toast; the process of malolactic conversion can add creamy, buttery flavours; lees ageing adds body as well as biscuit notes.
