Chilean wine is constantly learning more about itself, as it experiments with new and old grapes in old and new locations. As with other countries, recent plantings have focussed on cooler areas of this generally very warm, dry country, encouraging the grapes to retain acidity and therefore produce fresh and balanced wines. For reds, try Carmenere, Pinot Noir and Cabernet Sauvignon, with excellent Riesling, Sauvignon Blanc and Chardonnay in the whites
